This chocolate banana bread vegan and gluten free recipe is a big hit in my kid's school for fundraisers. So, what do we do when we have ripe bananas? I observe often in my family and friends that ripe bananas tend to be abandoned and often trashed. But wait a minute, bananas are a lot more nutritious and sweeter when ripe. I frequently request my friends to save their ripe bananas for me and I will turn them into a delicious banana bread, brownies, or mini muffins. I often cut them into small square brownie like shape to give more servings and to eat a little less treat, but they are gone the same day I bake them. Another great use for ripe bananas is to peel them, cut them in pieces and freeze them for smoothies. I am curious about what you do with ripe bananas too. Please let me know in the comments.

Preheat your oven at 350 degrees Fahrenheit.
Mash the bananas and add all the ingredients, except for the walnuts and chocolate chips, to a mixing bowl and mix.
Add the chocolate chips and walnuts last and mix gently.
Grease a baking pan 8 x 8 or any pan you have.
Add the mix to the pan and bake for 40-50 mins or until a toothpick comes out clean of batter.
Enjoy warm or at room temperature or cold. Make it your way. It is delicious any way.
