This chocolate banana bread vegan and gluten free recipe is a big hit in my kid’s school for fundraisers. So, what do we do when we have ripe bananas? I observe often in my family and friends that ripe bananas tend to be abandoned and often trashed. But wait a minute, bananas are a lot more nutritious and sweeter when ripe. I frequently request my friends to save their ripe bananas for me and I will turn them into a delicious banana bread, brownies, or mini muffins. I often cut them into small square brownie like shape to give more servings and to eat a little less treat, but they are gone the same day I bake them. Another great use for ripe bananas is to peel them, cut them in pieces and freeze them for smoothies. I am curious about what you do with ripe bananas too. Please let me know in the comments.
