Matcha Mochi Pancakes Key Ingredients

  • Matcha: Get a good quality matcha such as a ceremonial grade or culinary grade. The more intense its green color, the better the quality.
  • Chocolate Chips: You can use any chocolate chips you like. However, if you are vegan or are avoiding dairy, select a vegan brand. You can also use sugar-free chocolate chips as a sugar-free option.
  • Gluten-Free Flour: A great gluten-free flour is 1-1 Baking Four by Bob’s Red Mill. We have been using it for all our flour recipes, and it is awesome.
  • Plant-Based Milk: Use any plant-based you like. However, for a sugar-free option, use unsweetened milk. We used almond milk, plain and unsweetened. Almond milk is versatile, so we use it for all our sweet or savory recipes.
  • Baking Powder
  • Organic Brown Sugar: You may use any sugar you like, but always opt for organic. Some good options are coconut sugar, organic maple syrup, and molasses. For a sugar-free version, omit the sweetener.
  • Vanilla extract
  • Lemon juice: You may be wondering why do we need lemon? Well, the lemon juice creates a reaction with the baking powder making the pancakes super fluffy and delicious. So please do not omit the lemon juice. Another option could be to use white vinegar.

Items You Will Need to Make These Matcha Mochi Pancakes

  • Two mixing bowls: One for the wet ingredients and the second one for the dry ingredients
  • A spatula and/or a whisk
  • Medium or large pan
  • Measuring Spoons: 1 tablespoon, 1 teaspoon
  • Measuring Cups

How to Make Matcha Mochi Gluten Free Pancakes Step by Step

  1. Mix all the dry ingredients in a bowl: flour, matcha, sugar, and baking powder.
  2. Mix the wet ingredients in another bowl: vanilla, milk, and lemon juice.
  3. Pour the wet ingredients into the dry ingredients and mix a little. Don’t overmix.
  4. Let the batter sit for 5 mins. Add a little more milk if the batter seems too thick. You will notice that the batter becomes foamy, and this is okay. The reaction of the lemon with the baking powder causes this foamy texture.
  5. Use about 1/3 cup of batter and pour into a hot, greased pan. I used a little bit of coconut oil to grease the pan.
  6. Flip when the bubbles are around the edges. Finish cooking on the other side.
  7. Serve warm or store in the refrigerator in a tight container.
  8. Enjoy with your favorite berries or fruit. You may add your favorite syrup. I used organic maple syrup from Costco. And why not drink a latte with it? You can pair it with our iced matcha latte, too!

It contains catechins, a family of polyphenols in tea that act as natural antioxidants. A matcha study indicates that the number of certain catechins in matcha is up to 137 times greater than in other types of green tea!

It has also been found that matcha helps protect the liver, improves brain function, helps with weight loss, and may help reduce breast cancerprostate cancerand colorectal cancer. It is accessible to everyone and easy to make. Matcha’s high content of chlorophyll also helps the body detox naturally.

Matcha has different levels of quality, so you want to ensure you get the best quality matcha to get the most nutrients possible.

Grades of matcha

Ceremonial grade matcha. The best quality of matcha is the ceremonial grade. It has a vibrant green color and a rich aroma and does not taste bitter. It is grown and harvested in Japan under special conditions and handpicked. It is harvested when the leaves are young, and its chlorophyll and amino acids, like L-theanine, are abundant.

Thin tea matcha. It is also known as Usucha. This grade of matcha has a bitter than the ceremonial grade. However, many prefer it due to its higher polyphenols and bold taste.

Culinary grade matcha. The culinary grade matcha has the most pungent bitter taste of all. The cost is more affordable than the ceremonial grade and thin tea.

Matcha has different levels of quality, so you want to ensure you get the best quality matcha to get the most nutrients possible.

Matcha contains a concentrated amount of antioxidants, which may reduce cell damage and prevent chronic disease.

Don't omit the lemon juice as it makes a great reaction with the baking powder and makes the pancakes very fluffy.

Omit the sugar for sugar free version

You may omit the chocolate chips as well or use sugar free vegan chocolate chips.

White chocolate chips will also work and look beautiful

This recipe was made with gluten free flour which gives the mochi consistency. However, you may use any equivalent flour. I have not tried almond flour or coconut flour, which I don't believe will work well.
