This Healthy Vegan Lemon Curd recipe is super easy to make and tastes heavenly! It is smooth, creamy, and tangy. It makes a great spread for muffins, bread, toast and scones, and a perfect filling for cakes. You could never know it is vegan, gluten free, eggless and dairy free!

Ingredients

  • Full Fat Coconut Milk (13.5oz)
  • Lemon Juice (freshly squeezed)
  • Lemon Zest
  • Brown sugar or coconut sugar
  • Organic corn starch
  • Ground Turmeric
  • Salt

  • 1 large pan to boil water
  • 1 smaller pan that fits in the larger pan where the ingredients will warm up to make a double boiler
  • Measuring spoons: 1/8 tsp, 1/8 tsp
  • Measuring cups: 1 cup, 1/2 cup, 1/2 cup
  • Whisk or mixing spoon, heat resistant

What makes this lemon curd”healthy” and what are the nutritious benefits?

Not only is this lemon curd plant based and low carb, but also it is filled with fresh ingredients and superfoods all packed into a delicious tangy treat.

Nutritive value of lemons

Lemons are high in vitamin C. According to Health Line, just one lemon can provide 51% of the reference daily intake (RDI) or 31 mg of vitamin C. In addition, lemons contain soluble fiber and beneficial plant compounds that are good for the heart and help lower cholesterol. Furthermore, lemons have been found to help with weight loss, anemia, kidney stones, digestive issues, reduce heart disease risk, and cancer. As a bonus, lemons have a delicious tangy taste great for food and drinks. The lemon aroma is also used in aromatherapy.

Nutritive value of turmeric

Turmeric is a spice relative of ginger, and it is common in Indian, Southeast Asian, and Middle Eastern cooking. It is considered a superfood with natural anti-inflammatory effects which can help fight cancer, ease depression, and help prevent or treat diabetes 2. Turmeric contains curcumin which might help to fight off some viruses including herpes and flu. It also helps ease PMS symptoms according to a recent study. Turmeric has been in studies that suggest that it also helps with headaches, high cholesterol, Alzheimer’s disease, arthritis, cancer, irritable bowel syndrome, and acne.

How to make vegan lemon curd step by step

  1. Place a double boiler over medium heat on your stove. The double boiler consists of a large pan with some water and a smaller pan on top so that the ingredients heat gradually. Add the coconut milk, lemon juice, and lemon zest and whisk together. 
  2. In a medium size bowl add the sugar, turmeric, corn starch, and salt and mix very well.  
  3. Pour the dry ingredients in the bowl into the wet ingredients heating in the double boiler (the two pans on your stove top) and whisk until it is smooth. Then mix often for about 5 minutes.
  4. As the ingredients start warming up, stir more often. The water in the bottom pan will start bubbling when the boiling point is reached. When you see the bubbles, start mixing more until the mixture thickens.
  5. This step is optional if you like a smooth lemon curd without crumbs or lemon zest. Use a heat proof mesh and heat proof bowl and strain the lemon curd. 
  6. Let the curd cool uncovered on the counter for approximately 1 hour.  After one hour has passed, place in covered jars or containers and refrigerate. The curd stays fresh in the refrigerator for about 1 week.
  7. Serve chilled and mix it a little to make sure the lemon curd is smooth.
  8. Enjoy with your favorite scones, toast, fruit, yogurt, oatmeal or anything you like.

Useful tips and tricks for the perfect vegan lemon curd

  • Optional Add-Ins and Variations. In this recipe we used brown sugar, but you could use any sweetener you like such as coconut sugar, pure cane sugar, powdered erythritol, agave, date paste, or maple syrup. If you wish to avoid added sugars, you could make it without any sweetener. We used full fat coconut milk, but other milks can be used such as almond, hazelnut, oat milk, or any milk you like. However, the fat in the coconut milk gives it that creamy consistency. You can add 1 tablespoon of vegan butter or coconut oil for a richer consistency. Strain the lemon curd if you wish a smooth consistency without the lemon zest or any crumbs.
  • How to serve your lemon curd or what to serve it with. Serve it chilled and give it a whisk before serving with your favorite scones, toast, fruit, yogurt, pudding, oatmeal, muffins, bread, and can be used for cake filling.
  • How to store your lemon curd. Store in covered jars or containers in the refrigerator and give it a stir before serving. It stays fresh in the refrigerator for about one week.

  5. This step is optional if you like a smooth lemon curd without lemon zest or crumbs. Use a heat proof mesh and heat proof bowl and strain the lemon curd. (I personally like the crumbs, so I don't strain my lemon curd.)

  6. Let the curd cool uncovered on the counter for approximately 1 hour.  After one hour has passed, place in covered jars or containers and refrigerate. The curd stays fresh in the refrigerator for about 1 week.

  7. Serve chilled and mix it a little to make sure the lemon curd is smooth.
