It is very versatile because you can easily add your favorite brownie toppings. These brownies are truly yummy. You will not believe they are dairy free, vegan, sugar free, and keto. My husband is not vegan, but he said that these brownies are the best he has ever tried.

Key ingredients and items you need for the vegan Keto brownies

Ingredients

  • Ground flaxseed meal
  • Almond butter – When selecting your almond butter, it is better for your healt to choose one that only has almonds and perhaps salt in the ingredients. Many almond butters have added oils and preservatives that are not very good for your healt.
  • Medjool dates pitted or date paste – if your dates have seeds, make sure to take the seeds out. The Fruit Bliss Organic Deglet Nour Dates are a great option or Joolies Organic Whole Medjool Dates
  • Salt
  • Water – we used the water where the dates were soaked. This method serves two purposes: 1) we are conscious about the use of the water by recycling, and 2) we speed up the egg binding quality of the flaxseed meal to use as vegan eggs.
  • Vanilla extract – use a good quality vanilla extract or a vanilla bean. We used Pure Bourbon Vanilla Extract from Trader Joes and it is very tasty. Simply Organic Madagascar vanilla flavor is also very delicious.
  • Unsweetened cacao/cocoa powder – the better the quality the better the taste of your brownies. We love Navita’s Organic Cacao or Hershey’s.
  • Almond flour – make sure that you use almond flour, not almond meal. Almond flour is more finely grinded and will make a better consistency for your brownies.
  • Baking powder
  • Chocolate chips (optional)
  • Chopped walnuts (optional)

Health benefits of the ingredients in these vegan Keto brownies

Brownies are rich in chocolate flavor and this recipe contains loads of cocoa powder. Other abundant and highly nutritious ingredients of these vegan keto brownies are dates, almond butter, almond flour and flaxseed meal. Each one of these ingredients has several nutritional benefits. However, we will focus on the cocoa, since cocoa is the primary flavor and ingredient.

Cocoa

Cocoa has so many health benefits. It was difficult for me to condense some of them in this section. I will share the ones that seemed more interesting to me.

Cocoa comes from the Mayan civilization in Central America and was introduced into Europe by the Spanish conquistadors in the 16th century. The cocoa powder is made by crushing the cocoa beans and removing the oil. It was quickly adopted by Europeans who considered it a health promoting food. Cocoa contains polyphenols, flavanols, and can improve blood flow and reduce cholesterol. Polyphenols can help to reduce inflammation and improve cholesterol levels. Cocoa also contains flavanols, between 30–1,218 mg, which can help reduce blood pressure and improve nitric oxide levels.

That is just about the cacao powder, but the flaxseed, almond butter and dates are very nutritious too. So, in this dish you are not only getting the cocoa powder benefits, but also the other nourishing ingredients to make a delicious healthy chocolaty treat.

How to make vegan Keto brownies step-by-step

  1. Preheat the oven to 350 degrees Fahrenheit. Grease or line with baking paper an 8-inch by 8-inch square baking pan and set aside.
  2. In a small pan, heat the 1 cup of water, and when it starts boiling, add the dates, turn off the heat, cover it with a lid, and let it rest for 10 minutes. Do not discard the water, we will use it later to make flaxseed eggs.
  3. In a small food processor, add the soaked dates and about ¼ cup the water where the dates were soaked and process until the dates are converted into a paste. Do not discard the rest of the water. You would have about ¾ of warm water remaining from the date soaking method.
  4. Mix the ground flaxseed meal in a small bowl and the rest of the water where the dates were soaked. Set it aside for about 5-10 minutes until it turns into gel.
  5. In a medium bowl, start mixing the salt, almond flour, baking powder, and cocoa powder and stir to combine. Add the almond butter, vanilla extract, and the “flax eggs” and mix until everything is combined.
  6. Add your favorite add ins such as walnuts and chocolate chips and mix very well. The mix will be thick you should be able to mix it with your mixing spoon. If it is too hard, add a little bit of water about 1 tablespoon at a time. Leave about 1-2 tbsp of each topping (chocolate chips and walnuts if you are using these) to sprinkle on the top.
  7. Transfer the brownie batter to the greased pan and smooth the top and sprinkle chocolate chips and walnuts last.

  • Substitutions
    • Almond butter: can be substituted by any nut or seed butter, such as peanut butter or cashew butter. We have not tried it with seed butters yet.
    • Dates: substitute using 1/2 to 1 cup coconut sugar, erythritol, maple syrup, or any sugar or sweetener you like.
    • Chocolate chips and walnuts are optional
  • Additional toppings
    • Coconut, pecans, raisins, or anything you like in your brownies. Use 1/4 to 1/3 cup each.

  5. In a medium bowl, start mixing the salt, almond flour, baking powder, cocoa powder and stir to combine. Add the almond butter, vanilla extract, and the flax eggs (flaxseed meal and water mixture) and mix until everything is combined.

  6. The mix will be thick, but you should be able to mix it with your mixing spoon. If it is too hard, add a little bit of water about 1 tablespoon at a time. Add your favorite add ins such as walnuts and chocolate chips and mix very well. Leave about 1-2 tbsp of each topping (chocolate chips and walnuts if you are using these) to sprinkle on the top.

  7. Transfer the brownie batter to the greased pan (8x8 in), smooth the top, and sprinkle chocolate chips and walnuts last.

  8. Bake in the preheated oven for 25-30 minutes, or until the sides are coming away from the pan, or until you insert a toothpick, and it comes out clean. The center might appear not fully cooked, but this is okay. It will continue setting as it cools down.

  9. Let the brownies cool down for about one hour and then slice as you please. Enjoy with your favorite milk or coffee of by themselves! They taste amazing in any way.
